RED CABBAGE, APPLE AND UMEBOSHI
1 tablespoon corn oil
1 small, red cabbage, sliced fine
2 cups apple juice
2 tablespoonsumeboshi vinegar
1 diced apple
3/4 cup sultanas or raisins
1. Heat oil in a skillet and add cabbage. Stir
gently over medium-low heat for 2
2. Add apple juice, umeboshi vinegar, apple
and sultanas or raisins. Bring to a boil.
Simmer slowly over low heat for 45
3. Stir and serve. The umeboshivinegar
keeps the cabbage a bright red color.
